  • 3 passion fruits
  • 2 teaspoons caster (superfine) sugar
  • 300ml / 1¼ cups double cream (heavy cream)

How To Make Passion Fruit​ Pavlova:

  1. Preheat and Prepare: Set the oven to 180°C / 160°C Fan / 350°F and line a baking sheet with parchment paper.
  2. Make the Meringue: in a grease-free bowl, whisk the egg whites until stiff peaks form. Slowly add sugar, a spoonful, until the mixture is glossy and firm. Gently fold in the cornflour, pepper, vinegar, and rosewater by hand until well mixed.
  3. Shape and Bake: Pile the meringue onto the lined baking sheet, shaping it into a thick, round disc about 22cm / 9 inches wide. Place in the oven, immediately lower the heat to 150°C / 130°C Fan / 300°F, and bake for 1 hour. Let it cool completely in the oven with the door slightly open.
  4. Prepare the Topping: Hull and slice the strawberries. Scoop out the passion fruit juice and strain it over the strawberries, discarding the seeds. Sprinkle with caster sugar and let it sit while you whip the cream.
  5. Assemble: Whip the cream until soft peaks form. Spread it over the cooled meringue, then spoon the strawberries with their juice on top. Serve and enjoy!
