Nigella Broccoli Stilton Soup​ ​Recipe ​

  • 200 g / 7 oz Stilton cheese, crumbled or chopped
  • Freshly ground black pepper, to taste
  • 1 long fresh red chili pepper, deseeded and finely chopped (optional, for garnish)

How To Make Broccoli Stilton Soup?

  1. Cook the Spring Onions: Heat 3 tbsp garlic-infused olive oil in a large pan over medium heat. Add 6 chopped spring onions and cook for 2 minutes until softened.
  2. Add Broccoli & Season: Stir in 2 tsp dried thyme and 1 kg frozen broccoli, cooking for a minute to combine the flavors.
  3. Add Stock & Stilton: Pour in 1250 ml hot vegetable stock and add 200 g crumbled Stilton cheese. Bring to a simmer, cover with a lid, and cook for 5 minutes.
  4. Blend the Soup: Transfer the soup in batches to a blender (or food processor) and blend until smooth. If the soup has cooled, reheat it in the pan. Season with freshly ground black pepper to taste.
