Ingredients Needed:

  • 1 pizza base (enough for a 12-inch pizza, slightly larger or smaller is fine)
  • 1 serving pizza sauce
  • 1 mini pepper, sliced
  • 3 cherry tomatoes, quartered
  • ¾ cup (85 g) shredded mozzarella
  • ¼ cup (40 g) feta cheese, crumbled
  • Fresh basil leaves (optional garnish)

Halloumi Coating:

  • 5 oz (140 g) halloumi cheese, sliced
  • 4 Tbsp (about 30 g) breadcrumbs (panko or regular dried)
  • 2 tsp Italian seasoning or Italian mixed herbs
  • 1.5 tsp fennel seeds
  • ½ tsp smoked paprika
  • 1 egg, whisked
  • 2 Tbsp (30 ml) olive oil

How To Make Halloumi Pizza?

  1. Preheat Oven: Preheat the oven to 200°C / 400°F.
  2. Prepare the Pizza Base: Roll out the pizza base, spread the pizza sauce on top, and add most of the mozzarella (reserve a little for later). Set aside.
  3. Mix the Coating Ingredients: In a small bowl, combine the breadcrumbs, Italian seasoning, fennel seeds, and smoked paprika. Whisk the egg in another small bowl.
  4. Coat the Halloumi: Dip each slice of halloumi into the egg, then into the breadcrumb mixture, and lay it on a plate or parchment paper.
  5. Fry the Halloumi: Heat olive oil in a frying pan over medium-high heat. Add the halloumi and fry on each side until lightly golden, being careful not to overcook as it will continue cooking in the oven.
  6. Assemble the Pizza: Place the fried halloumi on top of the pizza, then add the remaining mozzarella, feta, cherry tomatoes, and sliced peppers around the halloumi.
  7. Bake the Pizza: Place the pizza in the oven and bake for 10-12 minutes, until the crust is golden and the cheese is melted and starting to brown. Garnish with torn basil leaves, if using.

Recipe Tips:

  • Use Fresh Ingredients: Choose fresh veggies and good halloumi for the best taste and texture in your pizza.
  • Don’t Cook Halloumi Too Long: Fry the halloumi until it’s golden but not too crispy. It will cook more in the oven.
  • Change Up Your Toppings: You can add any veggies or meats you like. This recipe is flexible, so use what you have.
  • Preheat the Oven Well: Make sure your oven is hot before you bake the pizza. This makes the crust crispy and the cheese melt well.
  • Let It Cool a Bit Before Serving: Wait a few minutes after baking to cool the pizza. This helps the cheese firm up, making it easier to cut and serve.

How To Store & Reheat Leftovers?

  • Refrigerate: Let the leftover Nigella Halloumi Pizza cool down to room temperature. After that, wrap it well in plastic wrap or put it in an airtight container. You can keep it in the fridge for up to 3 days.
  • Freeze: For freezing, cool the pizza first, then wrap the slices in plastic wrap and put them in a freezer bag or container. It will last for about 2 months in the freezer. To thaw, place the pizza in the fridge for several hours or overnight before serving.
  • Reheat: Place a slice of pizza on a microwave-safe plate. Cover it with a microwave-safe lid or a paper towel to keep moisture in. Heat for about 30-60 seconds, or until hot.
